The Wine

The Pairing
TJ’s, Seared Spicy Peanut Ahi Tuna Tacos
What you will need:
1 package Frozen Ahi Tuna Steaks (about 1 pound)
1 bottle Spicy Peanut Vinaigrette
1 package Smallish Gems Sweet Lettuce (seasonal) OR Romaine Hearts, leaves separated, rinsed, patted dry and chilled in the refrigerator
1/2 cup sliced Sugar Snap Peas
1/2 cup diced Sliced Fresh Del Monte Gold Pineapple Spears
1 Valencia Orange, peeled and diced
1 large Avocado, diced
1 Tbsp. chopped Chives
1/4 cup TJ’s Old Fashioned Salted Blister Peanuts OR TJ’s Organic Roasted & Salted Valencia Peanuts
1 can Canola Oil Spray
How to prepare it:
To marinate fish, remove frozen Ahi from packaging and place into a medium baking dish. Pour half the bottle of Spicy Peanut Vinaigrette over steaks, cover dish with plastic wrap and leave in refrigerator 8 hours or overnight, flipping steaks half way through. Short on time, defrosted steaks can marinate in vinaigrette for 1 hour in the refrigerator prior to preparation. To sear the Ahi, bring a medium frying pan up to medium high to high heat, and coat the bottom of the pan lightly with canola oil spray. Remove and discard excess marinade from fish. Sear the fish for 1-2 minutes on each side until desired doneness. Remove from pan onto a cutting board and slice against the grain into 1/2 inch-thick slices. Arrange tuna slices atop lettuce leaves, then sprinkle with snap peas, pineapple, oranges, avocado, chives and peanuts. Drizzle fresh dressing over each taco and enjoy! Recipe adapted Traders Joe’s Options (use any fresh fruit you like that is bright in flavor) you can also use regular flour or corn to tortillainstead of the lettuce, just put a little oil or butter in a warm skillet and heat each side before serving. I squeezed a fresh lime wedge on mine and added a few cilantro leaves,
