The Pale Rosé 2020 by Sacha Lichine

This is a new rosé wine by Sacha Lichine, renowned rosé winemaker whose award-winning rosés include Whispering Angel and Château d’Esclans. Made from a blend of Grenache, Cinsault, Syrah, and Rolle from the Vin de Pays du Var, region of Provence. The grapes were whole-cluster pressed, fermented cool and slowly in stainless steel to maintain strong aromatics, then aged three months on the lees before bottling; resulting in a very approachable soft yet crisp, rosé, with aromas of limestone, cherry, strawberry, and nectarine, followed by subtle, fruity notes on the palate, leading to a clean finish. This rosé is will work well with many types of foods. Critical acclaim WW89 ”soft-spoken, pleasing wine that exhibits pleasant aromas and flavors of red fruits and chalk. The Pairing
Smoked Salmon with the Softest Scrambled Eggs
What you will need:
Slices smoked salmon
6 eggs
2 tablespoon heavy cream
Salt to taste
Pepper to taste
2 tablespoon butter
Optional: chopped chives, two bagels, and four dollops of cream cheese
How to prepare it:
Remove two slices smoked salmon from the package. Using a sharp knife, cube into 1-inch squares. Crack three eggs into a mason jar and pour in the heavy cream. Add pepper and salt. Whisk quickly with a fork, or tightly seal the jar and shake until it’s all combined. Melt the butter in a small pan over medium-high heat. Once all the butter is melted, pour the egg and heavy cream mixture into the pan and cook for 2 minutes, or until the edges begin to set. Add smoked salmon cubes to the pan and scramble for just another minute. Remove from the heat. Top with chives and serve alongside a toasted bagel with cream cheese. Serves two
