Cork Wines & Spirits opened in Hoboken July 2014 and in Harrison December 2014.  Both cities were in need of a fine wine shop to meet the palates of an amazing and knowledgeable crowd of wine enthusiasts. Not only do they love a delicious wine, but are willing to explore the vast ways that people extract this liquid from grapes. We have taken it upon ourselves to find winemakers who are interested in bringing their creations to New Jersey.  The Wine Guys taste every wine that is in our stores, handpicking each item, making sure that our customers receive only the best. In addition, we encourage our customers to participate in our tasting panels adding their selections to our offering!

Don Bernardino, Mencia Barrica, Amandi Ribeira Sacra, 2011

With its terraced vineyards plunging hundreds of feet down the slopes of the Sil canyon, Ribeira Sacra and the sub region of Amandi is one of the most strikingly beautiful wine regions in the world.  The centuries old practice of “heroic viticulture,” (the caring and harvesting of vineyards grown on very steep inclines) is continued in this sub climate that has great sun exposure, sufficient natural rainfall, efficient drainage, and alluvial/slate soil which combine to grow some of the best Mencia in all of Spain.  This delicious maroon colored wine emits aromas of earthy dark red fruit, like plum and dark cherry with a subtle minerality.  Medium round in mouth feel, the wines tannin structure provides a balanced grip. Flavors of plum raspberry and an earthiness lead to a medium long finish that has lingering dark fruit flavors and a touch of mineral. Pairing this wine is easy as it will go with most stews, beef, pork or bean dishes, hearty cheese, olives and cured meats. Only 500 cases of this wine were made and Cork has some to share with you! The Wine Enthusiast agrees with us, they awarded this wine 90 points.  

Bodegas Loa, Spes Rioja, Crianza, 2010

 Made from 100% Tempranillo the flavors are classic with cherry, plum and a soft/sweet tobacco note all enhanced by aging in French and American oak barrels. Medium/full in body this wine has round balanced mouth feel with just a touch acidy which is indicative of higher elevation fruit of Rioja, making it a perfect accompaniment for meat and hearty dishes.

Penedo Borges Reserve Malbec 2013

Penedo Borges Reserve Malbec is made from 85% Malbec, 10% Cabernet Sauvignon, and, 5% Syrah, Maturation: 10 months in French and American oak Barrels, and 8 months in the bottle. This wine has a dark violet color, with aromas of plum, dark berries and a touch of sweet vanilla and spice. Medium in body the wine has a soft mouth feel with flavors of just-ripe dark fruits with slight spice, accompanied by a subtle coffee note and plum jam.Soft tannins lead you to a soft finish that lingers, just for a while. This is a really good wine choice to transition into fall winter, and it pairs super well with this dish.

 This wine made from 25% Grenache, 25% Cinsault, 25% Cabernet Sauvignon and 25% Syrah from 15- to 25-year-old vines grown on the hillsides of Provence above the Mediterranean Sea. This rosé shows a pale, salmon pink hue. A light fresh nose of young field strawberries fused with ruby red grapefruit citrus notes. Typical Provence style on the palate that starts with a smooth texture and flavors of apricot/white peach, and clean minerality uplifted by balanced acidity that adds freshness  that flows through to a long lingering finish.

Chateau Siaurac, Lalande de Pomerol 2009

80% Merlot, 20% Cabernet Franc, fermented in a combination of concrete and stainless steel vats followed by aging in 15%, new, French oak barrels for an average of 12 months. This very well balanced wine is medium in body with enticing aromas of dark plum cherry and black currant, followed by subtle earthy spice. Fine tannin structure and 6 years of bottle aging have given this wine a supple mouth feel and an integrated richness revealing flavors of plum cherry and mocha with a slight truffle-like earthiness, leading you to a finish that lingers just the right amount of time.This layered bottle wine can be enjoyed by itself or will complement most medium fare very well. Both of the wine guys have this wine on our personal wine lists.

Spann Mayacamas Range Cabernet Sauvignon

2011 only 12 barrels of this wine were made, yielding 295 cases of what I think represents the best value for any California Bordeaux style blend under $50This wine is made from mostly estate fruit comprised of, 75% Cabernet Sauvignon, 11% Malbec, 10% Petit Verdot and 4% Cabernet Franc grown at 1700' in the Mayacamas Mountains, and aged for 26 months in French oak. Dark crimson in color this rich, medium bodied wine offers a bouquet of dark black cherry and cassis with subtle oak notes wound together by coffee bean. Masculine without any hard edges this wine has flavors of cherry black current and soft spice box with a hint of vanilla that lead you to a long savory finish. $39.99  

Quasar, Carmenère, Perfecto Curico Valley 2010

Quasar Wines have been produced since 1930, using estate fruit that is grown using environmentally conscious practices. The vineyards are located in the Curicó Valley, and benefit from intense sunlight, ideal temperatures and pure mountain water from the splendid Andes Mountains. The Quasar, Carmenère, Perfecto, has a deep garnet color, with, inviting aromas of dark cherry, mocha and a subtle note of fresh peppers.This wine is ready to drink with soft fine tannins that surround flavors of dark fruit, spice and fresh herbs with a slight earthy note of dark olive tapenade. Medium/ full in body with 5 years of bottle age this wine is smooth and ready to drink. It's just a little outside of the box, yet familiar and a pleasure to drink.The Beverage Tasting institute gave the wine a gold medal and a score of 90 points.

 Taanug Brut Cava (Kosher) 

From Catalunya Spain the Taanug Brut Cava is made from Macabeo, Xarel·lo and Parellada grapes that are fermented separately then blended for secondary bottle fermentation for more than 12 months. The whole winemaking process, from vineyard to bottling is overseen by a Rabbi, assuring the highest standards and creating a wine that is light dry and refreshing. Light golden in color this wine has fine small bubbles that bring a bouquet of golden apple and a touch of melon aromas to the nose. The effervescence of this wine keeps the pallet light. Fresh flavors of apple and light stone fruit with a touch of minerality leads you to a crisp clean finish, which lingers just enough before you take another sip, and ring in the New Year. 


2011 Fosse-SechE

The 2011 Saumur Blanc Arcane displays somewhat wacky, foxy notes as if there was some botrytis in the grapes as well as a white hybrid grape quality. This is clearly a “love it or leave it” style of wine, and I suspect those looking for kinky dry whites will find this tantalizing. Hipster sommeliers will be lining up for this. RP-WA

Made from Chenin Blanc vines that are cultivated naturally and with great care that produce great wines like this. Loaded with minerals, crisp orchard fruit and hints of honeyed almond.

The North Fork Project Chardonnay 2014

From the north fork of long island this wine is great for any celebration and it's a steal at $15.99 for a liter bottle. The aromas of this light golden wine are notes of, apple pineapple, and a touch of melon. Medium in body, this well balanced wine has crisp acidity and flavors of clean apple and citrus with a hint of minerality that lead you to a short clean finish that makes you want to take another sip. This wine is one of Corks top recommendations for everyday drinking and entertaining.

Chateau, Lorgeril de Pennautier l'Esprit, Cabardes 2011

This Chateau has been in the family since the 1620's. Located in the Languedoc  this estate grown, wine is made from 60% Syrah and 40% Merlot, aged in new French oak barrels for 1 year. The boutique of this wine has a nose of complex, dark fruit, black truffle, and coriander, accented with a peppery note.  With a full mouth feel the flavors of dark cherry, plum, dark chocolate smoked tea are harmonious with well integrated oak suggesting slight box spice and a long finish. This wine will complement the rich savory flavors

Shinas Innocent Viognier  2013

This wine is a hearty layered and appropriate for bolder foods and winter. Pale yellow gold in color, with heady aromas of apricot and melon, this wine has a full body with a rich slickery mouth feel and enveloping flavors of apricot, custard, honeycomb and spice with a clean mineral note that ties it all together, in a lengthy and slightly spicy finish. If you are a red wine drinker looking for a  white, this is it.

Illuminati, Riparosso,Montepulciano d'Abruzzo 2012

This wine opens with earthy aromas of tilled wet soil and black fruit. The juicy palate offers ripe blackberry and cherry, along with hints of white pepper and spice. There's no complexity here but this hearty food-friendly red is perfect for everyday fare-thanks to its delicious fruit and freshness.WE 87

Fresh and zesty, with a hint of earth underscoring the tangy black raspberry, plum and olive tapenade flavors. Offers a lightly chewy finish. Drink now through 2017. WS 86

La Gioiosa Rosea Rosé Brut, NV 

made for generations by the Moretti Polegato family. This wine is a light bright rose in color, with a fine and delicate perlage (bead or bubble), showing a delicate bouquet of just ripe golden apple and small mountain flowers. The flavor is dry, fresh and zesty with a fruity and harmonious aftertaste.
